Cucumber, Grapefruit And Crab Salad


100g crab meat or crab sticks

2 grapefruit

1 avocado

2 cucumbers

200g mixed salad

75 ml kefir

3 tbsp. olive oil

0.25 tsp. sugar


Step by step recipe

Step 1

Peel one grapefruit, cut out the flesh from the slices with a sharp knife, leaving the membranes. Cut the avocado in half lengthwise, remove the pit and peel the skin. Cut the flesh into slices and put it in a bowl. Add the sliced cucumbers and grapefruit slices.

Step 2

Cut the second grapefruit in half, squeeze the juice from one half, pour into the bowl and stir gently.

Step 3

Prepare the dressing. Squeeze the juice from the other half of the grapefruit, combine with the kefir and olive oil. Add salt, sugar and whisk.

Step 4.

Slice the crab meat or crab sticks into small pieces. Arrange lettuce leaves on plates and arrange avocado and cucumbers and crab on them. Top with the dressing and serve immediately.
