Tomatoes and strawberries go well together. The cheese is also perfect in this company. We used mozzarella, but goat and sheep cheese will also work.
To make 4 servings you need:
2 cloves of garlic
500 g large strawberries
1 tbsp brown sugar
25-30 ml apple cider vinegar
0.5 tsp. dried thyme
0.5-1 tbsp. extra virgin olive oil
400g multi-coloured tomatoes, preferably a mix of green and cherry tomatoes
120-150 g mozzarella
30-40 g lettuce
salt and freshly ground black pepper
For the dressing, squeeze the garlic through a press. Whisk in blender together with 100g strawberries, vinegar, sugar, thyme and olive oil. Strain through a sieve and season with salt and pepper.
Cut the remaining strawberries into several pieces. Cut the cherry tomatoes in half. Cut the large tomatoes into the same length of chunks. Cut the cheese into 2 to 4 portions, depending on size.
Place the large tomatoes in a salad bowl and sprinkle with the dressing. Mix the korn, cherry tomatoes, strawberries and cheese in a separate bowl, season with salt and pepper. Arrange on top of the tomatoes. Serve with the dressing.
