Apple Cheese

Apple cheese is a Lithuanian Christmas treat. A unique, healthy, flavorful, tasty dessert.

Ingredients

apples 3 kg

ground cinnamon 2 tsp.

sugar 600 g

nuts 100 g

Step by step recipe

Step 1.

Slice the apples, put them into a pan and pour over the sugar. Allow to stand until the juice flows out. When all the juice has been released, put the pan on a fire, bring to the boil. Reduce heat to minimum and simmer for 30 minutes, stirring frequently to prevent the mixture from sticking.

Step 2.

Put a small part of the apples into a bowl, and chop the rest of the apples with a blender, and continue boiling over low heat until thicker and caramelized. It will take 2 to 3 hours to boil away.

Step 3

Add the ground cinnamon, nuts and reserved apples to the apple puree. Spoon the mixture into several layers of damp gauze. Place the mixture in a bowl, cover with a weight and leave for 24 hours. After 24 hours, tie up the gauze and hang the apple cheddar at room temperature to mature for at least a month. The longer the apple cheddar ages, the thicker, tastier and more aromatic it becomes.
