Spinach With Walnuts

This is the easiest side dish to make and it’s perfectly versatile – spinach with nuts can go with meat, chicken or fish. Make it bigger and serve it with pasta or rice, for example – it makes a complete dinner.

1kg fresh spinach or 600g frozen

40 g pine nuts, walnuts, hazelnuts or almonds

1 medium red onion

6-8 cloves of garlic

80 g butter

salt

freshly ground white pepper

Step By Step Recipe

Step 1

Trim fresh spinach: remove stems that are too tough, cut large leaves into pieces. Defrost frozen spinach beforehand.

Step 2

Peel the garlic, cut into thin slices. Peel the onion and cut into as small pieces as possible.

Step 3

In a large frying pan, heat the oil with the salt, onion and garlic over a medium heat. Cook until the garlic starts to become translucent.

Step 4

Add the walnuts and spinach, mix gently. If the spinach is fresh, cover with a lid – it will wilt more quickly this way. If defrosted, simply heat through, stirring to release any excess liquid. Boil away the liquid from the fresh spinach as well, removing the lid after a couple of minutes.

Step 5

Season the cooked spinach with salt and pepper and serve.
