Another quick-and-dirty summer cottage salad can be made from young zucchini. It looks very smart, so it is often cooked for the holidays. Please note – fresh zucchini is cut very thinly with a vegetable peeler.
Ingredients for the salad:
small zucchini – 1 pc.
cherry tomatoes – 100 g
feta cheese – 100 g
basil to taste
olive oil – 2-3 tbsp. l.
salt and pepper to taste
Wash vegetables and herbs well.
Slice the zucchini thinly with a vegetable peeler. He should be a little immature. These fruits are very tender and sweet when raw.
Cut the cherry tomatoes in half, crumble the feta, and let the basil stay as it is.
Mix vegetables, salt and pepper and season with olive oil. Garnish with basil leaves. Spread the zucchini ribbons in bulk to make the salad look more interesting.
It is the perfect side dish for meat and fish. It will successfully fit into a lean and vegetarian menu (cheese will have to be replaced with vegetables). If you are slimming, you don’t have to worry about calories!
