Shrimp Aguachile

This appetizer is very quick and requires no cooking skills at all.

Aguachile with prawns

6 servings, cooking time: 35 min.

What you need:

500-600g large raw prawns

4 limes

2 large green chilli

2 garlic cloves

1 small bundle of coriander

1 large long cucumber

1 red onion

salt, freshly ground black pepper

corn chips to serve

What to do:

1. Peel the prawns from the shell and remove the intestinal vein. Brush the limes and dry them. Remove the zest from all the limes with a fine grater. Squeeze the juice from 3 limes. Pour the shrimp over the lime juice, stir thoroughly and leave in the refrigerator while everything else is cooking.

2. For the salsa sauce, squeeze the juice from the remaining limes and place in a glass blender along with half the zest. Add the coarsely chopped chilli, garlic and coriander and chop until smooth.

3. chop the red onion into thin halves. Peel the cucumber, cut in half lengthwise and scrape out the seeds with a spoon. Cut the flesh across into small slices.

4. Drain the prawns, pour over the chilli salsa, add the onion and cucumber, salt and pepper. Serve at once, with the corn chips (or on chips).
