Crispy Potato Spirals

What you need:

3 medium potatoes

1 medium egg

3 tbsp milk

2 tbsp. grated parmesan

3 tbsp potato starch

salt, freshly ground black pepper

frying oil

What to do:

1. Brush the potatoes and put them into a pot of boiling salted water and cook until soft, 30 minutes. Then rinse them in cold water.

2 Peel the potatoes and mash them. Add all the rest of the ingredients except the butter and mix until smooth.

3. Transfer the potato mixture to a pastry bag with a thin round nozzle. Heat a 1.5 cm layer of oil in a non-stick pan.

4. gently press the potato mixture into the pan in thin strips, at the same time arranging it in a spiral shape – from the centre to the edge.

5. Fry the potato spirals on both sides until firmly golden brown, turning them over a couple of times. Place the finished spirals on a sieve to drain the excess oil. Serve hot.
