Harissa is a very spicy pasta. Beware.
4-6 servings, cooking time: 1 hour, 20 minutes.
What you need:
1 medium chicken weighing 1.5 lbs.
4 bell peppers
2 medium red onions
4 tsp. adjika or harissa
sea salt, freshly ground black pepper
What to do:
1. Preheat the oven to 180°C. Cut the sweet peppers into quarters lengthwise and remove the seeds and membranes. Peel the onions, also cut into quarters.
2. Cut the chicken lengthwise along the spine, open it like a book.
3. Dissect the onion into “petals”, mix with the peppers, pour a little oil, put in the adjika, stir. Spread the peppers and onions on a baking tray, drizzle with vinegar.
With the remaining mixture of ajika and oil, rub chicken and lay it on the vegetables skin side up so that some of the vegetables are inside. A little salt and pepper.
5. Place the tray with the chicken and vegetables in the oven, bake for about 50 minutes. Serve the chicken and vegetables hot.
