What you need:
50g walnuts
100 ml walnut oil
1 garlic clove
half an orange
1 tsp. maple syrup or honey
salt, freshly ground black pepper
What to do:
1. Remove the zest from the orange with a fine grater and squeeze out the juice. Stir in the juice and zest.
2. Crush the garlic, peel it, mortar it together with the nuts and salt and grind into a coarse purée.
3. Mix the contents of the mortar with the orange juice and zest, maple syrup/honey and oil and season with pepper.
