Broccoli is very often cooked in batter. We’ve gone a step further and made an interesting breading for the sprouts using bread, smoked bacon and spices. The breaded broccoli can be either a side dish or a stand-alone dish.
Ingredients
500g broccoli
200g crumb of stale white bread
1 garlic clove
1 chili pepper
3 sprigs of rosemary
70 g finely sliced smoked bacon
extra virgin olive oil
salt, pepper
Step by step recipe
Step 1
Cut the broccoli into florets, halve the large florets. Halve the chili and remove the seeds. Finely chop the chili and garlic.
Step 2.
Boil salted water in a large saucepan, add the broccoli and simmer for 4 minutes. Then immediately plunge the broccoli into the iced water. Remove and dry on paper towels.
Step 3
Mix the finely chopped bacon with the breadcrumbs, chili pepper, garlic, rosemary leaves and chop with a blender to a crumble. Fry the resulting mixture in a dry non-stick frying pan until golden.
Step 4
Place the broccoli in a pan with 1 tbsp olive oil and heat through. Mix with the resulting breadcrumbs, sprinkle with freshly ground pepper and serve.
