Grilled Cheese

Grilled cheese is a great appetizer and the perfect accompaniment to salads of fresh or baked vegetables and herbs.

You can fry almost any kind of cheese, the most well-known grilled cheeses are Greek haloumi, Caucasian suluguni and Asian tofu. Adygei cheese, feta, brie, camembert and mozzarella, which for some reason is rarely fried, although this cheese is great to bake on pizza, are very tasty in fried form.

While haloumi or tofu can be grilled without breading or batter, for other especially soft cheeses, it is better to make a dough batter. In this version, the soft cheese turns into a tender melted mass in a crispy coating. Today we would like to offer our signature recipe of grilled brie cheese with tomato chutney

Ingredients

  • garlic – 2 cloves
  • 2 tablespoons olive oil
  • 2 rounds of brie cheese
  • green apple
  • flour – 100g
  • 4 apricots
  • For the chutney:
  • lemon (zest)
  • 1 purple onion
  • 1 tbsp. raisins
  • 1 cup ground crumbs
  • frying oil
  • eggs – 2 units
  • 2 green tomatoes

Step by step recipe

Step 1.

Soak the apricots and raisins. Peel and finely chop the tomatoes. Dice an unpeeled apple.

Step 2

Chop onion and garlic and sauté in olive oil for 3 minutes. Add the tomatoes and apple. Braise for 2 minutes.

Step 3.

Add raisins and dried apricots chopped into strips. Braise for 2 more minutes. Season, then remove from the heat and cool.

Step 4.

Cut the brie into 4 pieces, coat the pieces in flour mixed with the zest, then in the egg, then in the breadcrumbs. Roll the cheese a second time in the same way.

Step 5.

Heat the deep fryer oil to 190ºC and fry the cheese until golden. Serve hot with a cold chutney.
