Homemade Burger With BBQ Sauce

Ingredients:

For Burger :

beef – 500 g

carbonated water – 1 tbsp. 

red onion – 1 pc.

tomatoes – 1 pc.

iceberg salad – 100 g

cheddar cheese – 50 g

salt and pepper to taste

For the test:

wheat flour – 200 g

milk – 90 ml

dry fast-acting yeast – 10 g

chicken eggs – 1 pc.

sugar – 1 tbsp. 

salt – 0.5 tsp.

butter – 15 g

egg yolks – 1 pc.

sesame seeds – to taste

For BBQ sauce:

ketchup – 200 g

water – 75 ml

cane sugar – 2 tbsp. 

Worcestershire sauce – 3 tbsp 

orange juice – 50 ml

onions – 0.5 pcs.

garlic – 4 cloves

bell pepper – 0.5 pcs.

liquid honey – 1 tbsp. 

smoked paprika – 1 tsp

oregano – 1 tsp

cumin- 1 tsp.

dried ginger – 1 tsp

vegetable oil – 50 ml

salt and pepper to taste

Cooking method:

-In the blender, combine wheat flour, salt, sugar, yeast, chicken egg, warm milk, and room temperature butter. Knead the dough at the lowest speed and let it proof right in the bowl. 

-In the meantime, prepare the sauce. Put the saucepan on the fire, pour vegetable oil into it.

-Crush the cloves of garlic, chop a third of the bell pepper, place everything in a saucepan.

-Chop the onions coarsely and send them to the rest of the vegetables.

-Fry vegetables until golden brown and sprinkle with cane sugar.

-Reduce heat and add spices to the saucepan. Stir and heat to release all the aromas.

-Reduce heat a little more, add ketchup, orange juice, Worcestershire sauce and water to the vegetables. Stir and let the sauce simmer on very low heat for 40 minutes.

-While the sauce is cooking, make homemade mince. With the universal meat grinder attachment, this does not take much time. Install the second bowl, which also comes with the kitchen machine, and the attachment itself. Grind the beef.

-Next, add a little smoked paprika, salt and pepper, a little cold soda water to the minced meat. Mix the minced meat thoroughly.

-To form a beautiful, even cutlet, take a plate of parchment and place a culinary ring on it. Use it to form a cutlet from the minced meat. Place the workpiece in the refrigerator for a while.

-Lightly flour the dough, wrinkle and form into two large buns.

-Put the blanks on a baking sheet lined with parchment, brush with yolk and sprinkle with sesame seeds.

-Let the buns rest for 30 minutes, then bake at 200 ° C for 20 minutes.

-Meanwhile, the sauce is ready. Add a little honey to it, stir. Then strain through a sieve.

-Heat the grill pan well over high heat and fry the cutlet on it for 1.5 minutes on each side.

-Chop up iceberg lettuce and vegetables. Remove the buns and cool slightly. Let’s start assembling burgers.

-Cut each bun, brush with sauce, add crispy lettuce, red onion, juicy tomato slices.

-Then put the cutlet, cover it with cheese, add a little more aromatic sauce and finish with the second half of the bun.
