Quinoa and Eggplant Salad

This dish is hearty and nutritious, rich in vitamins. In nature, such a salad will perfectly satisfy your hunger. You can boil the groats at home, and then you just have to bake the eggplant on the grill and quickly mix all the ingredients before serving.

Ingredients:

eggplant – 1 pc.

quinoa – 100 g

cilantro – a small bunch

garlic – 2 cloves

chili pepper – a small piece

olive oil to taste

salt to taste

Cooking method:

Place the quinoa in a saucepan, add 1: 1 water and bring to a boil. Reduce heat and simmer cereals until tender, 15 minutes.

Cut the eggplant into slices. Fry the slices on a wire rack for 5-7 minutes on each side until golden brown.

Chop the cilantro and garlic finely, and chop the hot pepper into thin rings.

In a salad bowl, combine the quinoa, eggplant, herbs, garlic, and hot peppers. Season with lightly salt and season with olive oil.
