For making 4 pieces you need:

800 g skinless chicken thighs 

100 g onions

10 g salt

2g freshly ground black pepper

160g beef fat

Spicy herbs, thin Armenian pita bread, tomatoes and lightly salted cucumbers

Slice the chicken fillet and the pre-frozen fat with heavy knives/sticks. Chop the onions as finely as possibleSliced beef pita bread with tomato.

Chop them as finely as possible. Season with salt and pepper. Mix thoroughly.

Knock back the minced meat well so that any excess air is expelled. Form into a ball, place in a bowl and chill for 30 minutes.

Shape the filling into thick sausages, put on skewers and flatten with your hands.

Grill until cooked but not too dry! Serve with chopped herbs, pita bread, cucumber and tomato slices.
