Ingredients
200g of berries (strawberries, raspberries, blueberries)
The juice and zest of half a lemon
4 yolks
100 ml of sweet champagne
85 grams of sugar
Step by step recipe
Step 1
Peel the berries. Cut the large strawberries into 2 to 4 pieces. Drizzle with lemon juice and sprinkle with 1 tsp. sugar. Stir gently and place in the refrigerator.

Prepare a water bath: boil so much water in a large saucepan that the bottom (preferably round) of a steel bowl will not reach it. Grate lemon zest on a fine grater. Set the bowl in the saucepan. Put the zest, sugar, and yolks in the bowl and start beating with a whisk.

When the mass has lightened and increased in volume, pour in the champagne a little at a time, without stopping to whisk. Spread the dessert in a crème de la crème and garnish with the berries. Serve the sabayon as soon as it is ready, warm.
A tip
An excellent accompaniment to the sabayon is a thin shortbread cookie “Cat’s tongues” or a piece of muffin.
