Vegan Cheesecake

I would like to offer you a recipe for vegan cheesecake without baking, with agar-agar. Cheesecake is meant in quotes, since cream cheese is not acceptable for vegans. I use almond milk, a drink made from almonds and water. It is similar to soy milk and other kinds of plant-based milk. Almond milk can be drunk by vegetarians and vegans. It is lactose and cholesterol free.

How to Make Vegan Cheesecake  

Ingredients

cherries (pitted weight) – 200 g

almond milk – 200 ml

agar-agar – 1 tsp.

sugar – 1-2 tbsp.

dates – 7-8 pcs.

handful of almonds

fresh raspberries for decoration

Step by step recipe

Step 1

Chop almonds and dates.

Chop the almonds in a blender. Add the dates. Crush evenly in a serving ring (7.5 cm in diameter).

Step 2

Prepare the cherry juice

Wash the cherries, remove the pips. Prepare the cherry juice in a juicer. 

Step 3

Making Cherry Almond Milk

Pour the almond milk into a small saucepan, add the sugar, and bring to a boil. Add the agar-agar, reduce the heat and simmer for 4-5 minutes. Pour the cherry juice into the milk. Remove from heat, and allow to cool slightly.

Step 4

Pour cherry and almond milk into ring on tamped base

Pour the cherry and almond milk into the ring on the flattened base. Allow the dessert to set. 

Step 5.

Vegan cheesecake ready to serve.

Remove the ring. Top the dessert with fresh raspberries (or cherries). 

Useful tip.

It’s better to use sweet cherries. I got 100-120 ml of juice from 200 g of cherries. I made two small cheesecakes with that amount of ingredients and I made them in lettuce portions.

A tip

Keep in mind that agar-agar is insoluble in cold water, it must be dissolved in liquid heated to 90-100 degrees, the same begins to solidify at 40 degrees. Completely set in the cooled form.
