A very healthy salad with a bright rich flavor.
Warm salad of mini calamari, apples and spinach
500g mini calamari
1-2 sweet and sour apples
4 medium cucumbers
100g of young spinach
1 small bundle of parsley
4 garlic cloves
zest of 1 lemon
For the dressing:
2 tbsp. mustard with seeds
1 tbsp. honey
3 tbsp. lemon juice
4 tbsp. olive oil
salt, freshly ground black pepper
Step by step recipe
Peel and coarsely chop the apples and drizzle with lemon juice so that they do not turn dark.
Finely chop the parsley and garlic and add the lemon zest to the mixture. Place the salad leaf mixture with the apples and cucumbers on the plates.
Put all the ingredients for the dressing in a jar with a tight-fitting lid and mix.
Heat a large skillet with olive oil over high heat. Place the calamari; fry for 1 minute. Sprinkle with parsley and garlic and lemon, fry for 20-60 seconds, depending on size. Arrange calamari on plates.
Shake the dressing vigorously in the jar so it becomes an emulsion, pour over the salad and serve immediately.
