Baked Carrots With Garlic And Coriander

There are few dishes in the world that are so simple to prepare and require so few ingredients – yet are so satisfying. And no one expects “baked carrots” to be special from the start. It’s more likely to produce a slightly dejected look on your dinner table – but only until you put the plates in front of them.

Ingredients

800 g juicy carrots

6 garlic cloves (30g)

50 g ghee

1 tsp. ground coriander (4g)

salt

freshly ground black pepper

Step by step recipe

Step 1

Preheat the oven to 200°C. Line a deep baking tray with parchment.

Step 2

Crush, peel and chop the garlic. In a small saucepan, lightly heat the butter – just to melt. Add the garlic, coriander and a little salt and pepper.

Step 3

Peel the carrots and cut into large chunks. Place the carrots in the prepared mold, drizzle with the oil and spices. Cover with more parchment on top and place in the center of the heated oven.

Step 4.

Bake the carrots for 20-30 minutes, depending on the desired degree of softness. Serve hot.

If the carrots are not juicy enough, you can pour some water or juice into the mold: apple juice, pineapple juice, orange juice.
