How To Make Vegan Cauliflower Puree

Sauté onion and garlic until translucent. Add 40g of onion and 10g of garlic per kg of cauliflower, to ensure they will not overpower the taste. 

Next, place the stripped cauliflower into small florets in the same saucepan, and leave it to steam together for a while. 

Add 140g of coconut milk (it has to be very light but not too creamy and sweet for us), and sauté together until the cabbage is cooked. 

Then open the lid, increase the heat and boil away the excess moisture by stirring. After that, it remains to turn our cabbage into mashed cabbage. Even a simple household blender can manage this – it will turn out smooth and textured. And salt to taste.

I recommend doing this at the very end. This will make it easier for you to find the salt balance. If you don’t want to make it vegan, I recommend sautéing the onion and garlic in butter instead of vegetable oil. And add a little more butter to the mashed potatoes. It’s even tastier. It’s a great side dish for any fish or as a standalone dish if you want to unload.
