Gluten Free Biscuits In 25 Minutes

Because of the high starch content of this exotic fruit, the ingredients successfully bind together so that the biscuits do not fall apart, although they do come out nicely crumbly.

Ingredients

  • ripe bananas in medium size – 2 pcs.
  • salt – 1/4 tsp.
  • Jerusalem artichoke syrup (or other sweetener) – 1-2 tbsp.
  • Ground cinnamon – 1 tsp.
  • vegetable oil – 40 ml
  • chickpea flour – 70 g
  • coconut flour – 50 g
  • baking powder – 1 tsp.

Step by step recipe

Step 1

Prepare the dough for the biscuits. Wash and peel the bananas. Break the pulp into bite-sized pieces and place in a bowl. Thoroughly crush them with a fork or pusher.

Step 2

Add salt, topinambour syrup, ground cinnamon and vegetable oil to the bowl with the mashed banana. Mix thoroughly with a cooking spatula. Vanilla extract can be used in place of the cinnamon.

Step 3

Sieve the chickpea flour and coconut flour for the biscuit dough through a fine sieve along with the baking powder. Add the resulting mixture to the banana flour and mix thoroughly. Leave to rise for 10 minutes.

Step 4

Roll the dough into small balls. Place them on a baking tray lined with baking paper. Then use a fork to gently flatten each ball.

Step 5.

Preheat the oven to 180°C. Bake the gluten-free biscuits for 15-18 minutes. Allow to cool slightly on a baking tray then transfer to a wire rack. Serve with tea or coffee.

A tip

Gluten-free biscuits can be covered with melted dark chocolate icing and then decorated with coloured sprinkles. It is delicious and pretty!
