Chicory Fried in Brown Butter with Blue Cheese Sauce

What you need:

4 scallions of chicory

50g butter

100g cream

33-38% fat

100g blue cheese

ΒΌ tsp. nutmeg

3 sprigs of parsley

Salt, black pepper, ground chili.

What to do:

1. Cut the chicory lengthwise into quarters. Finely chop the parsley. Break the cheese into small pieces.

2. Melt the butter in a wide frying pan and heat over a low heat until brown and nutty, 3 to 5 minutes.

3. Place the chicory in the butter and season with salt, pepper and chilli. Increase the heat to medium-low and fry the chicory on all sides until brown. Put them on a plate.

4. Add the cream and cheese to the pan and heat until the cheese has melted. Pour over the chicory sauce, sprinkle over the parsley and serve at once.
